I’m currently obsessed with coconut milk and cooking porridge in it. It comes out so creamy and so so tasty. I didn’t used to like anything coconut-like as a kid and now I love everything coconut. If you haven’t yet tried cooking your porridge in coconut milk you have to, you’ll never look back.
This combination of the coconut porridge with the peach was heavenly and the perfect busy morning breakfast. If you’re like me and love anything coconut, you’ll love this. Such a distinctive way to start and fuel up for your morning.
I’ve been having coconut porridge nearly every morning this week, it’s such a basic recipe therefore you can top it with any fruits, nuts, granola- whatever you have in your kitchen actually! It’s really nice with a banana and walnuts too.
Serves: 2 Cooking time: 5 minutes Total time: 10 minutes
Creamy Coconut & Peach Porridge
Water, enough to cover it in the pan
120ml coconut milk
A pinch of salt
1 large peach
- Put the oats in a pan and pour enough boiling water to cover them.
- Add a pinch of salt.
- Simmer on a medium-high heat stirring frequently to avoid it sticking for 3 minutes.
- Pour in the coconut milk and stir, letting in bubble slightly and become creamy.
- After 3 minutes serve in to bowls and top with sliced peach, coconut flakes and add milk of your choice if you want some liquid.
