I really do love pancakes. I mean, how many combinations and different flavours can we have on them? They make my day and they’re a great way to start your morning and fuel yourself up. I like making mine pretty simple with few ingredients and have them taste delicious! Even more so if we’re making them with ingredients we know provide us with goodness.

As I said the topping options are immense but these specifically turned out SO fluffy and went so well with the tanginess of the orange and strawberry compote. The combination in a bite of the fluffy pancakes, tangy orange and crunch of the seeds was so pleasant.

I made these fluffy, orange and poppy-seed pancakes and you need to try them. If you love them as much as I do, try this healthy pancake recipe.

Fluffy, Orange and Poppy Seed Pancakes

Ingredients:

For the pancakes:

2 eggs

50g oats

A tbsp cottage cheese

A handful of frozen berries

A tsp vanilla essence

Mixed seeds (pumpkin, chia, poppy, sunflower)

For toppings:

Half an orange

Strawberry compote (optional & RECIPE UP SOON ON HERE)

Method:

  1. Blend up all the pancake ingredients together
  2. Heat up a tsp olive oil in a frying pan and once hot add the mixture bit by bit. ( I made 5 pancakes to stack up )
  3. Start stacking up the pancakes. Add slices of orange in between them.
  4. Add slices of orange to the final stack, some strawberry compote and sprinkle mixed seeds to it.

You will love them! Perfect, quick and nutrient packed breakfast.
