High Protein French Toast
This is definitely one of my favourite breakfasts for when I’m out the door early but still want something in my stomach which will keep me full and energised. Normally when we hear french toast, we think of a difficult, usually high-calorie recipe. Well this is not the case! This is a high protein version with all the flavour and goodness. All you need is some basic day-to-day ingredients.
Serves: 1 Cooking time: 5 minutes Total time: 10 minutes
- 2 slices of bread (I used whole grain)
- 1 whole egg
- 2 egg whites
For the toppings
- Peanut butter
You can add any toppings you wish, there are endless combinations.
Heat up a pan, and whilst you’re waiting on it beat the whole egg with the two egg whites in a bowl. Add a sprinkle of cinnamon to this and soak the two slices of bread into the egg mixture until it can’t absorb anymore. With what is left of the egg mixture in the bowl, pour it into the pan and add the soaked pieces of bread into the pan immediately. Lower the heat down a tad and flip the bread over after 3-4 minutes. After another 2 minutes put the bread onto your plate and top it up! I chose blueberries and peanut butter, because peanut butter just can’t go wrong.
