Rocket and Alfalfa Summer Side Salad

In summer these refreshing salads are truly good. I don’t want something too hot for lunch with the sun shining on me. These side dishes are super refreshing and great to make in larger amounts for more people. They’re a great addition to your meal and they’re quick and easy to make. Plus, all the flavour and goodness goes into them and is an easy way to get your veg in.

I personally enjoy experimenting with salads and I love all the crunch and rawness of the vegetables. This rocket and alfalfa salad was so green, refreshing and easy to eat next to the main fish meal. If you’re like me and like something quick, easy and refreshing in this heat try this out.

Rocket and Alfalfa Summer Side Salad



Canon leaves, 1/2 bag

Rocket leaves, 2 big handfuls

Cherry tomatoes, 6

Alfalfa sprouts, a handful

Avocado, half

Fresh chives, 2 tbsp, finely chopped

Mixed seeds, 2 tbsp

For the dressing

1 tbsp olive oil

1/2 tbsp apple cider vinegar

1 tsp mustard

Salt & pepper


  1. Add the canon and rocket leaves to the serving bowl and mix with hands
  2. Slice the cherry tomatoes in to halves and add
  3. Cut the avocado into square chunks and add to the salad
  4. Thinly chop the chives and sprinkle over the top
  5. Add the alfalfa and sprinkle mixed seeds on
  6. In a separate bowl mix all the ‘dressing’ ingredients together and pour over the salad when serving.

It’s a quick, easy and flavourful side salad for a nice summer fish dish for example. I enjoyed the crunch of the seeds and smoothness of the avocado. So easy to eat and a very green salad.

This heat has got me enjoying easy meals and experimenting with in season ingredients. I’m loving and am so grateful for watermelon and melon at the moment and will be sharing a gorgeous recipe this week which is PERFECT to take to the beach as a snack. You’ll love it.
